First class quality fresh frozen boneless beef 100%male, ranging up
to a max of 30 months ,a combination between 2 ,4 & 6teeth(20% max)
cattle Inner organs including kidney fat removed, without head, feet,
full tail .
The meat should be cleaned, slaughtered according to Islamic rites ,
weighting a minimum 340 kgs per live head. Fat class 1, 2, 3 & visible
fat lower than7%.
Breakdown:

Forequarter5 rib delivered from beef side after removal of 8 rib pistola
hindquarter.
The boneless forequarter deboned removing all bone, blood cloths, glands,
ligamentam nuchea, excess fat including accumulation of the sternum,
heavy fat of the brisket dewlap.
1-A :the boneless 5 rib forequarter compromises the entire forequarter
5 rib in natural proportions including the following cuts: chuck, chuck roll,
shoulder, chuck tender, shin, brisket point & in natural proportion
( without neck)min 48pct from total amount.

B : Neck meat derived from 7thaxis max 15% 63% Forequarter
2- The boneless hindquarter cuts are derived from a round & comprise
the following cuts:
Tick flank, topside, silverside& shank.
Min 37% Hindquarter
Goods will be cut in pieces 1-3 kgs approx in size & individually seal
packed.
