Presently I am gathering information on specifications and
consultation for Wheat Flour sellers for Asian Noodle application.
I am only interested in Hard White Wheat
(eg. Blanca Grande or Alturas) with below specs and millers
or vendors (Only in USA) that specialize in Asian noodle
or have ongoing business with a manufacturer.
The general specs are:
1) Moisture-14% Max
2) Protein-8. 2% Max
3) Ash-0. 42% Max
4) Water Absorption-~60
5) Stability-~9
6) Viscosity-600 BU Max
